In Australia the wine produced from Semillon grapes presents different characteristics depending on the climatic and soil variations and the winemaker’s style. From the cool regions the wine will be high in acid, dry and often citrus-flavoured on the palate, whilst wine from the warmer regions will be less acid, with less citrus and more tropical fruit flavours.

Mouth: A delicate citrus palate with fine minerality leads to a seamless acid backbone, delivering a wine with great line and length.

Winemaking notes: After the grapes are harvested at night, the fruit is gently crushed, and the first 500 liters of free run juice is cold settled for 48-72 hours. The clear juice is then racked off and fermented with a neutral yeast strain for approximately three weeks at 14 degrees Celsius. The finished wine is cold settled again after fermentation, prior to racking and clarification.
