With its wide distribution throughout the world wine-growing areas, the style of the wine produced from Cabernet Sauvignon grapes will vary according to the climate, soil and winemaking techniques used. The wine usually has a complex bouquet and a perfumed, rich, capsicum, multi-berry fruit palate which is often astringent, possessing tannin and needing slow maturation.
Eyes: Deep crimson ruby
Nose: Fragrant sweet spice and mint with a background of warm oak and Christmas cake.
Mouth: Concentrated berry and mint with fine ripe tannins and a lingering finish. Robust and elegant with notes of blackcurrant and licorice
Recommended food pairings: Slow cooked lamb shoulder.
Winemaker: Liz Silkman
Winemaking notes: Fruit was crushed and fermented in 5 tonne batched for 12 days. The cap was plunged 4 times a day to extract colour and tannins from the skins. After pressing the wine was aged in French and American Oak hogsheads and puncheons for 12 months.
