In Australia Chardonnay has proved to be highly adaptable, growing well in warm irrigated regions or in cooler, often higher regions with a higher rainfall. The bouquet and palate, therefore, vary according to the growing conditions and the winemaking techniques used. Wine from the warmer irrigated regions, usually wood-treated, has a fruity bouquet of peaches and melon and a rich soft palate developing with age, whilst the wine from cooler regions will generally be more acidic, fresh and more delicate in its fruit palate.
Eyes: Pale green straw.
Nose: A fine and classic Hunter chardonnay with white peach, restrained flint and biscuity aromas.
Mouth: Impeccable fruit quality has produced an elegant wine with white peach and citrus flavours, which are rounded out by well-integrated French oak characters. A wine with excellent length and potential longevity.
Recommended food pairings: Whole baked Salmon stuffed with lemon and herbs

Winemaking notes: Careful fruit selection underpins a style of restraint and finesse. Slow cool barrel ferments, with 6 months lees maturation in puncheons and hogsheads provides a complex backdrop to naturally intense fruit flavours and mineral acidity. Minimal intervention winemaking techniques highlight fruit quality and showcase classic chardonnay varietal characteristics.
